Black Tea

With the Orthodox Method, the withered tea leaves are rolled, oxidized (fermented), and then fired. Rolling machines break the cells in the withered tea leaves, releasing their juices and enzymes. This exposes them to air and enhances the oxidation. In the highest quality of tea, the rolling is done by hand. Oxidation, also known as fermentation, begins during the rolling process. The broken leaves are exposed to air, resulting in a natural chemical process that produces the teas unique aroma and flavor. During oxidation, the tea leaf color deepens from green to reddish brown to nearly black. Last the oxidized tea leaves are fried, or dried, to stop the oxidation process and dehydrates the leaves for storage.
